Gloria’s One of Everything Salad

Friend and creative cook Gloria Ramos passed this one on to me. It’s very simple–there’s one of everything! Excellent for warm weather. Goes well with beef and poultry.

1 can kernel corn, drained and rinsed
1 can black beans, drained and rinsed
1 large tomato diced
1 medium Bermuda (red) onion diced

half a bunch of Cilantro finely chopped

1 large Avocado diced (save the pit and keep it in the salad to keep it from turning black)
1 large lime

Combine all ingredients, squeeze the lime into it, season with garlic salt and lemon pepper. Fresh garlic optional

I have a similar recipe and will say that this is a great dish for bbq’s. I like to chill mine for about 30 minutes before serving to allow all the flavors to mix together. For a kick I sometimes add some mexican seasoning. It also tastes great the next day. Thanks for sharing.
